Crunchy Avocado Coleslaw

I made this delicious goatmom coleslaw to go with the pulled pork.  And the best part of the recipe is this slaw has a healthy little surprise in it…

The surprise is the avocado. Avocado works as a healthy substitute to the gobs of mayo that go into most coleslaws.

I started with a bag of broccoli slaw. Dole Broccoli Slaw to be specific– this is the crunchy stuff and it makes a crunchy cole slaw.

In a small mixing bowl, mash up an avocado. Now, a lot of people don’t know the right way to get an avocado out of its skin. I’m always a little perplexed by all the avocado gadgets at the kitchen stores.

First: a good avocado is so dark green that it’s almost black. The completely green avocados are not ready to eat.

Second: if the avocado is ready,  you can just squeeze the meet out of the skin in about three seconds. No gadgets needed. Cut it in half and squeeze.

Squeeze until it’s all out. Then mash it up. Add sour cream and some vinegar and mix it all together. Other veggies can go nicely here. I added some extra carrot bits. Celery and radishes would go in here too. Finally, if you like it spicy, cut up some jalapenos. Shorebird doesn’t want things too spicy, but goat kept some jalapenos on the side and added them to the coleslaw on his plate.

Another trick you should know with avocados/guacamole is they turn brown after about 8 hours. But if you sprinkle a little lemon or lime juice into the mixture and stir it around, it will stay green longer for at least another day.

Ingredients

  • Bag of broccoli slaw
  • 1 avocado
  • 1/4 cup sour cream
  • 2 tablespoons of white wine vinegar
  • A bit of salt and pepper
  • Some lemon or lime juice
  • 8 jalapeno slices, quartered
  • Optional: extra carrots, radishes, celery, green peppers, chopped into bits

Instructions

  1. Mash 1 avocado. Mash the sour cream, vinegar, salt and pepper, lemon juice into it.
  2. Combine all the veggies and stir in the avocado mixture until everything is lightly coated.
  3. Garnish with jalapeno quarters
  4. Enjoy with the perfect pulled pork.
