BLT Salad with Red Pepper Mayonnaise and Homemade Croutons

melon salad10The other week I experimented with a BLT Salad, with homemade red pepper mayonnaise and croutons. This actually came out really great, although I didn’t take photos of the process. Here’s the recipe I made up though, which was enough for two.

Ingredients

  • 3 cups lettuce
  • 6-8 slices of bacon
  • 1 large tomato
  • 3-4 slices of bread
  • 2 tablespoons olive oil
  • 1/2 red pepper
  • 1/2 cup mayonnaise
  • 2 garlic cloves, minced

Directions

  1. Head oven to 400
  2. Cook bacon on skillet on medium-low heat (I like to cook bacon slowly. Can never get it right if I go too fast.)
  3. Cut bread into crouton-sized cubes and toss with olive oil and some salt and pepper if you’d like
  4. Put bread into over and it will turn into pretty good croutons in about 15 minutes
  5. Slice red pepper and roast in oven for about 10 minutes
  6. Remove red pepper from oven and chop into small pieces
  7. Stir red pepper and garlic into mayonnaise
  8. Toss the lettuce, tomato and bacon with the red pepper mayo (I also added some leftover cucumber from another recipe)
  9. Add the croutons last so they stay as crispy as possible. Enjoy!
